Honey-Roasted Sweet Potatoes

  • 3 large sweet potatoes (about 2 pounds), peeled and cut into 1-inch pieces
  • 2 tbsp olive oil
  • 2 tbsp honey
  • 1 tsp fresh lemon juice
  • 1/2 tsp salt, plus more to taste



Step 1

Preheat oven to 350F.

Place potatoes in a 9x 13 inch baking dish. In a small bowl whisk together the oil, honey and lemon juice. Pour mixture over potatoes and toss to coat. Sprinkle with salt and bake stirring occasionally until potatoes are tender, about 1 hour. Season with more salt and serve.
