Tomato Bites with Ricotta

Bloggers Adam and Joanne Gallagher from Inspired Taste make mini multigrain bites topped with ricotta cheese, fresh tomatoes and mint.
Ingredients

- can (13.8 oz) Pillsbury® refrigerated artisan pizza crust with whole grain
- Cooking spray
- 1/2 1/2
- cup ricotta cheese
- 1/2 1/2
- cup cherry tomatoes, sliced
- 2 2
- tablespoons finely sliced fresh mint leaves
- Salt and freshly ground pepper

Heat oven to 400°F. Line cookie sheet with cooking parchment paper or foil.
Unroll dough on work surface; starting at center, press dough into 22x14-inch rectangle. Using 2-inch round cutter, cut out 24 circles. Place circles on cookie sheet; spray circles lightly with cooking spray.
Bake 5 to 10 minutes or until lightly browned.
Top each baked circle with 1 teaspoon ricotta cheese, a few tomato slices, some mint and a sprinkle of salt and pepper.
