Tomato Bites with Ricotta

  • can (13.8 oz) Pillsbury® refrigerated artisan pizza crust with whole grain
  • Cooking spray
  • 1/2 1/2
  • cup ricotta cheese
  • 1/2 1/2
  • cup cherry tomatoes, sliced
  • 2 2
  • tablespoons finely sliced fresh mint leaves
  • Salt and freshly ground pepper

Heat oven to 400°F. Line cookie sheet with cooking parchment paper or foil.

Unroll dough on work surface; starting at center, press dough into 22x14-inch rectangle. Using 2-inch round cutter, cut out 24 circles. Place circles on cookie sheet; spray circles lightly with cooking spray.

Bake 5 to 10 minutes or until lightly browned.

Top each baked circle with 1 teaspoon ricotta cheese, a few tomato slices, some mint and a sprinkle of salt and pepper.
