Ingredients

  • Gems:
  • 1 yellow cake mix
  • 3 eggs
  • 1/2 cup oil
  • 1 teaspoon baking soda
  • 2 teaspoons ground cinnamon
  • 1 (20 ounce) can pumpkin
  • Cream Cheese Frosting:
  • 1 package cream cheese, softened
  • 1/2 cup butter, softened
  • 1 teaspoon vanilla
  • 3-4 cups powdered sugar

Preparation

Step 1

Preheat oven to 350 degrees. Blend together all ingredients. Spritz each mini-muffin well and fill 2/3 full. Bake for 15 minutes. Cool then frost with cream cheese frosting.

Frosting:

Cream together butter and cream cheese. Beat in vanilla. Gradually add powdered sugar until frosting is desired consistency.
