Ingredients

  • 3 eggs, beaten well
  • 1 1/4 cups sugar
  • 1 cup vegetable oil
  • 1 teaspoon salt
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 1/4 teaspoons baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 3/4 cup raisins
  • 1 cup chopped nuts
  • 2 cups finely chopped green tomatoes, drained well on paper towels

Step 1

1. Heat oven to 350 degrees. Grease two 9-inch loaf pans.

2. Combine eggs, sugar, oil, salt, vanilla and drained green
tomatoes. In a separate bowl, stir together the flour, baking soda, baking powder, cinnamon and nutmeg. Gradually add dry mixture to wet mixture. Stir well. Stir in raisins and nuts.

3. Divide batter among the two pans. Bake 45 minutes or until a toothpick inserted in the center comes out clean.
