Ingredients

  • 2/3 C butter, softened
  • 1/2 C packed brown sugar
  • 2 1/2 C flour, divided
  • 4 t finely shredded lemon peel, divided
  • 6 eggs
  • 2 1/4 C granulated sugar
  • 1/2 C lemon juice
  • 3/4 t baking powder
  • 1/8 t ground nutmeg
  • 1 t finely shredded lime peel
  • 2 T sifted powdered sugar

Preparation

Step 1

For crust, in large mixing bowl, beat butter on medium to high 30 seconds. Add brown sugar; beat until combined. Beat in 2 C flour until crumbly. Stir in 2 t of the lemon peel. Evenly press on bottom of prepared pan. Bake 20 minutes.

Meanwhile, for filling, in medium bowlcombine eggs, sugar, remaining 1/2 C flour, lemon juice, baking powder, nutmeg. Beat on medim 2 minutes. Stir in remaining lemon peel and lim peel. Pour over hot crust. Bake 20 minutes more or until edges are browned and center appears set. Remove to rack; cool 1 hour. Refrigerate, covered 2 hours.

To serve, sprinkle evenly with powdered sugar.

LINE PAN WITH FOIL WITH EDGES HANGING OUT. PREHEAT OVEN TO 350 DEGREES.
