Twice Baked Potatoes

This is my Aunt Patsy's recipe for twice baked potatoes. She made them for us and I immediately requested the recipe. Delicious!

Ingredients

  • 6 large baking potatoes (hand pick, same size potatoes)
  • 1/2-1 cup milk
  • 6 Tbsp butter
  • 1 tsp salt
  • 1/2 tsp pepper
  • paprika

Preparation

Step 1

1. Preheat oven to 400
2. Bake potatoes for one hour
3. Allow potatoes to cool for 10 minutes. Cut off top third of potatoes and scoop the potato out of the shells.
4. Put the potatoes through a ricer
5. Melt the butter and heat the milk.
6. Mash the potatoes with a hand masher. Add the butter, salt and pepper. Add the hot milk and keep mashing, adjusting milk as needed.
7. Whip the potatoes with an electric mixer. Scoop the potatoes into the potato shells and sprinkle with paprika.
8. Reheat in 350 degree oven for 30 minutes.

*You can assemble everything the day before and just reheat
