This is an old family recipe that has been passed down by my favorite great Aunt Jean. The Apple Fritters were cooked every year, without fail, on Fat Tuesday. There are two different batters, one is a wine batter, the other a beer batter.

Ingredients

  • Batter #1:
  • Apples, peeled cored and sliced
  • 1 1/3 cup flour
  • 1 tbsp sugar
  • 1/4 tsp salt
  • 1/2 tsp grated lemon rind
  • 1 egg, separated, room temperature
  • 2 tbsp melted butter
  • 1 cup dry white wine
  • Batter #2:
  • 1 1/3 cup flour
  • 2 tbsp sugar
  • 1 tsp salt
  • 2 eggs beaten, room temperature
  • 3/4 cup beer
  • 2 egg whites stiffly beaten

Step 1

Batter #1 Directions:
1. Place flour, sugar, salt, lemon rind in a bowl and add egg yolk and butter. Gradually beat in the wine to make a smooth batter.
2. Let stand at room temp for 2 hours
3. Beat egg white until stiff and fold into batter
4. Heat oil to 375.
5. take slice of apple and coat in batter. fry on both sides until golden brown.

Batter #2 Directions:
1. Place flour, salt, sugar, butter and eggs in bowl. Gradually add beer and beat until smooth.
2. Let stand at room temperature for 2 hours
3. Fold in stiffly beaten egg whites
4. heat oil to 375
5. coat apple in batter, fry on both sides until golden brown
