  • 5 to 6 medium size onions
  • 6 whole eggs or whole whites as a substitute
  • soft bread soaked in milk
  • oil
  • butter
  • hand ul of grated Parmesan


Servings 6


Step 1

Chop onions finely and brown them well in alitlle oil

Break eggs into bowl and beat them with a fork

Add onions

Squeeze milk from the bread, break it up well and add to the egg mixture with the grated parmesan

Mix well

Pour mixture into the buttered frying pan, add a sprinkle of salt and cook in the usual way, turning half way through the cooking

Serve hot
