Ingredients
- 1 pound salmon fillet
- 1 egg white
- 3 tbsp. rice flour
- 2 kaffir lime leaves, shredded, or zest from 1 lime, minced
- 1 tbsp. finely chopped ginger
- 1 tsp. wasabi paste
- 1 tbsp. soy sauce
- 3 tbsp. chopped cilantro leaves
- peanut oil for frying

Preparation
Step 1
Remove any bone from salmon and chop into 1/4" dice.
Combine the salmon, egg white, rice flour, lime leaves, ginger, wasabi paste, soy sauce and cilantro.
Heat 1/2" of peanut oil in a frying pan over medium heat to shallow fry the cakes. Place 2 tbsp. salmon mixture into hot oil and cook one minute on each side, until lightly golden. Drain on paper towels and keep warm in a low oven while you cook the rest.
