Ingredients

  • 2 tsp ground chiplotle chile pepper
  • 2 tsp black pepper
  • 2 tsp salt, divided
  • 4 1/2 to 5 lb chicken drummettes
  • 1 TBSP olive oil
  • 3 TBSP butter
  • 1/2 cup chopped onion
  • 2 garlic cloves, pressed
  • 1 cup apple cider vinegar
  • 1 (8 oz) can tomato sauce
  • 1 (6 oz) can tomato paste
  • 2 TBSP light brown sugar
  • 2 TBSP Worcestershire sauce
  • 2 tsp hot sauce

Step 1

Light one side of grill, heating to 350 to 400 heat (medium high). Combine first 2 ingredients and 1 tsp salt. Toss wings with olive oil and then sprinkle with pepper mixture, and toss again.
Arrange wings over unlit side of grill, and frill, covered with grill lid, 18 to 20 minutes on each side or til done.
Meanwhile, melt butter in a saucepan over medium-high heat; add onion and garlic, and saute 5 minutes or til tender. Reduce heat to medium. Add vinegar and next 5 ingredients, and remaining 1 tsp salt. Cook, stirring occasionally, 10 to 12 minutes or til bubbly.
Transfer wings to a clean bowl; add half of butter mixture, reserving remaining mixture. Toss wings gently to coat. Place wings on lit side of the grill. Grill, covered with grill lid, 10 minutes or til browned, turning occasionally. Toss wings with reserved butter mixture. Serve with ranch dressing.
