Eggplant Parmesan

Ingredients

  • 2 Large egg plants
  • 4 cups Bread crumbs
  • 1 cup Romano Cheese
  • 6 eggs
  • 1/4 cup Fresh parsley chopped
  • Mozzarella cheese

Preparation

Step 1

Peel eggplant and cut into 1/2 inch circles

salt both sides of slices and place in baking dish full of water. Let soak for one hour changing the water half way through and adding more salt.. ( this takes the bitter out of it)

Rinse eggplant and pat dry

Beat eggs and add parsley

Dip eggplant into egg mixture then into the bread crumbs

In fry pan hit 1 inch of oil Fry eggplant turning to cook evenly

Place on paper towel to dry

In baking dish add one layer of sauce layer of eggplant layer of mozzarella cheese ..

Repeat until eggplant is gone ending with sauce.
