Banana Peach Flambé

  • 2 bananas, peeled and sliced
  • 2 peaches, peeled and sliced
  • 1 tbsp brown sugar
  • 1 tbsp lemon juice
  • 2 tsp corn starch
  • 2/3 cup orange juice
  • ground cinnamon
  • ice cream
  • rum

Preparation

Step 1

Combine banana and peach slices with lemon juice.
In saucepan stir together the brown sugar and cornstarch. Stir in the orange juice. Cook and stir the mixture is thickened and bubbly. Gently stir in the banana and peach slices. Cook and stir gently for one to two minutes more. Sprinkle lightly with cinnamon.
Heat the rum in a small sauce pan just until it almost simmers. Carefully ignite the rum and pour over the fruit.
Serve immediately with ice cream.
