Cranberry Apple Dumplings

  • 1 1/3 cups of flour
  • 1/3 cup canola oil or olive oil
  • 3 tablespoons skim milk
  • 8 small red delicious apples cored
  • 3 tablespoons cranberries
  • 3 tablespoons chopped pecans
  • 8 teaspoons brown sugar
  • Cinnamon

Preparation

Step 1

Combine flour, oil and milk in a bowl. Press into two balls. Flatten one ball slightly and roll it between waxed paper to about an 8 inch round. Peel off the top paper. Cut the pie crust into 4 parts. Take one part and place an apple into the center of the crust. Fill the cored apple center with some cranberries, chopped pecans and a teaspoon of brown sugar. Pull the dough over the apple and press around the apple. Some milk can be brushed over the crust to aid borwning. Continue with the remaining dough and apples.

Place the dough-covered apples on a greased baking sheet. Bake at 400 degrees for 20 minutes or until the apple is soft and the crust is golden. Let cool a bit, but serve warm.
