Spinach and Goat Cheese Salad with Frizzled Prosciutto

Ingredients

  • 2 thin slices prosciutto, cut into 1/2 inch strips
  • 2 1/2 tbsp balsamic vinegar
  • 1 tsp extra virgin olive oil
  • 1/4 tsp salt
  • 1/4 tsp freshly ground black pepper
  • 10 oz fresh spinach
  • 1/2 c (2oz) crumbled goat cheese

Preparation

Step 1

1. Preheat oven to 400 degrees.
2. Arrange prosciutto in a single layer on baking sheet and bake for 6 min or until crisp. Cool completely.
3. Combine vinegar, oil, salt and pepper, stirring with a whisk. Combine spinach and prosciutto in a large bowl. Drizzle dressing over spinach and toss to combine. Sprinkle with goat cheese. Serve immediately.
