Ingredients

  • 1/2 Cup sugar
  • 1/2 Cup brown sugar
  • 1/2 Cup butter
  • 2 eggs
  • 1/2 tsp. PURE VANILLA EXTRACT
  • 3 very ripe bananas, peeled and mashed
  • 13/4 Cups flour
  • 1 tsp. baking soda
  • 1/2 tsp. baking powder
  • 1/4 tsp. CINNAMON or ALLSPICE (optional)
  • pinch salt
  • 1/2 Cup chopped walnuts

Step 1

Preheat oven to 400°. Grease a 5x9 loaf pan (a 41/2x81/2 will work as well). Cream together the sugars and butter until fluffy. Reduce the speed and add eggs one at a time. Add the VANILLA and mashed bananas and mix well. In a separate bowl, sift together the flour, baking soda, baking powder, salt and CINNAMON or ALLSPICE (if using). Add to the banana mixture and mix until just combined. Stir in the nuts. Scrape the batter into the loaf pan and bake at 400° for 10 minutes. Reduce heat to 350° and bake for 45-55 minutes more, until firm in the center. Let sit for 5 minutes on a wire rack, then run a knife along the edges and remove from the pan. Wait until cool to slice.
