  • For molasses Dijon spread:
  • 2 cups mayonnaise
  • 1 cup Dijon mustard
  • 2 tablespoons molasses
  • 1 teaspoon kosher salt
  • For sandwich:
  • 4 tablespoons butter
  • 4 slices bread
  • 2 tablespoon molasses Dijon spread
  • 8 slices red tomato (divided)
  • Smoked sea salt to taste
  • 4 slices yellow tomato
  • 2 thin slices red onion
  • Small bunch of watercress

Step 1

To make spread, combine all ingredients in a bowl and stir until completely blended. Set aside. For sandwich, heat saute pan on medium. Add butter, and when melted, add bread and grill until both sides are toasted, about 2 to 3 minutes each side.

Remove from pan and spread one side of each slice of bread with equal amounts of molasses Dijon spread to taste. Cover and refrigerate remaining spread for future use. For each sandwich, layer 2 slices of red tomato on 1 slice of bread. Season with smoked sea salt. Add two slices yellow tomato and season with smoked sea salt. Add onion slice, 2 more slices of red tomato and watercress. Top with other slice of bread. Serve immediately.

Makes 2 servings.
