Apricot Glazed Chicken with Garlic

  • 1/2 c low sugar apricot preserves
  • 1 T lower sodium soy sauce
  • 1/2 t garlic
  • 4 6 oz chicken breasts
  • 1/4 t salt
  • 1/4 t pepper

Step 1

Preheat grill to high. Combine first 3 ingredients in microwave safe bowl. Microwave at 30 seconds until preserves melt. Whisk until smooth.
Sprinkle chicken with salt and pepper. Place chicken on grill rack and grill 6 minutes. Turn chicken over and brush the apricot mixture. Grill an additional 6 minutes. 237 calories, 36 grams of protein
