Wilted Spinach Salad

Ingredients

  • 6 cup torn fresh spinach
  • 1 cup sliced fresh mushrooms
  • 1/4 cup sliced green onion
  • 3 slices bacon
  • 2 tbsp. vinegar
  • 1 tsp. sugar
  • Salt and pepper
  • 1 hard-cooked egg, chopped

Step 1

Combine spinach, mushrooms, and green onions. If desired, sprinkle with pepper. In a 12-inch skillet cook bacon until crisp. Remove bacon, reserving drippings in skillet. Crumble bacon; set aside.

Stir vinegar sugar and 1/4 teaspoon salt into drippings. Heat to boiling remove from heat. Add the spinach mixture.
Toss until coated. Transfer to a serving dish. Top with chopped egg and bacon.
Serve immediately. Makes 4 sides dishes salads.
