  • 1 pk beefless tips
  • 1/2 c cashews, whole raw
  • 1 T paperadelle
  • 2 T evoo
  • 1/2 C cherry tom
  • 1 C onion diced
  • 1 garlic clove
  • 2 C mushrooms
  • 1/2 C wine white
  • 3 t thyme fresh
  • 2 Tlemon juice
  • 1/5 t vege stock
  • 10 kalamata olives
  • 1 C cream...almond or cashew
  • s & p

Preparation

Step 1

to make cashew cream, put cashews in a bowl and add cold water to cover them. Cover and refridge overnite. Drain and rinse under cold water. place in a blender with enough cold water to cover them by 1 inch. blend on high for several mins. un til very smooth and then strain thru a fine mesh sieve.
cook paperadelle as package instructions

caramelize onions in oil on all sides 2-3 mins
take out and set aside saute tom till tender add onions, mushrooms and garlic till done. deglaze pan with wine. add everthing els, not the tips, and bring to a simmer and pour over tips
