Strawberry Mousse

Ingredients

  • 4 cups strawberries (2 pints)
  • 4 Tbsp. water divided
  • 1/2 cup plus 2 Tbsp. sugar
  • 1 envelope plus 1 teasp. gelatin
  • 3 egg whites
  • 1/8 teasp. salt
  • 1 1/2 teasp. vanilla divided
  • red coloring
  • 1 cup heavy cream

Preparation

Step 1

Prepare 2" collar on 4-5 cup soufflé dish

Puree 2 cups strawberries in blender with 2 Tbsp. water.

Repeat with remaining strawberries

In a small bowl mix 1/2 cup sugar with gelatin.

Add to strawberry puree and let stand 1 min.

Bring to boil, reduce heat and simmer for 5 mins.

Remove and set aside.

Beat egg whites and salt til stiff.

While beating, pour hot strawberries into egg whites in a thin stream.

Add 1 teasp. vanilla.

Beat for 10 minutes, then add 4 drops coloring

Whip cream, sugar,1/2 teasp. van, and 4 drops coloring.

Fold into egg white mixture and pour into soufflé dish and refrigerate for 5 hours or overnight.
