Rhubarb Strawberry Cake

This cake was my favorite growing up. My mom would make it when rhubarb was in season. A tart cake with a sweet strawberry flavor and a streusel topping. Very easy to make.

Ingredients

  • Topping:
  • 1/2 c sugar
  • 2 T soft butter
  • 1 egg
  • 6 T milk
  • 1/2 teas salt
  • 1 1/2 c flour
  • 1 teas baking powder
  • 4 c rhubarb cut up fine
  • 1 large pkg strawberry jello-dry
  • 1/2 c flour
  • 1 c sugar
  • 1/4 c butter

Preparation

Step 1

Mix the first seven ingredients and spread in a greased 9 x 13 pan. Put rhubarb on top and then sprinkle dry jello over the rhubarb. Mix flour and sugar together cut in the butter, it will be crumbly and sprinkle over the jello. Bake at 350 for 30-40 min.
