Apple, Blueberry, and Walnut Salad

  • 3 cups mixed greens
  • 2-3 T. balsamic vinaigrette (make it yourself with 3 parts olive oil, 1 part balsamic and a little salt and pepper)
  • 1 red apple, cored and sliced
  • 1/4 cup fresh blueberries
  • 1/4 cup sliced grape tomatoes (red, yellow, or mix)
  • 1/4 cup walnuts
  • 2 T. goat cheese



Step 1

Toss mixed greens with vinaigrette. Top with apple, blueberries, tomatoes, walnuts, and goat cheese.

Add your favorite protein to make it a meal.
