Easy Irish Colcannon (Mashed Potatoes and Cabbage)

Ingredients
- 2 tablespoons olive oil
- 3 cups (about half a 16-ounce bag) coleslaw mix (shredded cabbage and carrots)
- 1/2 cup diced onions
- 1 container (24 ounces, about 2 1/2 cups) prepared mashed potatoes
- Salt and pepper

Step 1
Heat oil in a large skillet over medium heat. Add coleslaw mix and cook until tender, 3 to 4 minutes, stirring occasionally. Add onions and cook until translucent and cabbage is golden brown, about 5 minutes. Fold in prepared mashed potatoes and stir until well incorporated. Spread mixture to the edges of the skillet. Cook, without stirring, until the mixture browns a little on the bottom, 3 to 4 minutes. Fluff with a fork and season with salt and pepper before serving.
Makes 4 servings.
