Potato Salad with Sausage and Grainy Mustard Dressing

We serve this as a side to bratwurst. It can also be used as a main course. The dressing can be used as a sauce for fish such as Salmon.

Ingredients

  • Grainy Mustard Dressing:
  • 1/4 cup course-grain mustard
  • 3 Tbls cider vinegar
  • 3 Tbls sugar
  • 1/4 cup peanut oil
  • 1/4 cup torn curly-leaf parsley
  • 2 Tbls thinly sliced green onions
  • 1/2 tsp kosher salt
  • Potatoes:
  • 1 lb small red new potatoes
  • 1 lb small yellow new potatoes
  • 1 Tbls kosher salt
  • 3 Tbls cider vinegar
  • 1/2 cup cured sausage such as salami/pepperoni

Preparation

Step 1

Grainy Mustard Dressing:
In a small bowl whisk together mustard, vinegar, salt, and sugar. In a steady stream, whisk in peanut oil until well blended. Stir in parsley and green onions.

Potato Salad:
In a 4 quart saucepan combine potatoes, salt and vinegar. Add water to cover potatoes and bring to a boil. Cook over medium heat ( about 30 min ) until potatoes are done. Drain well.
Cut potatoes in bite-size pieces into a mixing bowl. Cut sausage into 1/4 x 1/4 x 1/2 inch pieces Add to mixing bowl. Add grainy mustard dressing all at once and gently fold mixture together. Serve warm or at room temperature.
