Grilled Pancetta-Wrapped Peaches

- 3 ripe peaches, quartered and pitted
- 12 slices pancetta
- 1 tsp, salt
- 1/4 tsp. pepper
- 3 loosely packed cups arugula
- 2 tbsp. extra-virgin olive oil
- 1 1/2 tsp. aged balsamic vinegar

Step 1
I. Build a fire in a charcoal grill, preheat a gas grill or heat a cast-iron grill pan over medium heat until very hot.
2. Wrap the peaches with the pancetta slices. Sprinkle all over with 3/4 teaspoon salt and 1/8 teaspoon pepper. Grill over . medium heat, turning once, until the pancetta is rendered and the peaches are soft, 3 to 4 minutes total. Set aside in a warm place.
3• Put the arugula in a bowl. Drizzle with a few drops of the oil, and sprinkle with the remaining 1/4 teaspoon salt and 1/8 teaspoon pepper. Toss well.
4•To serve, make a bed of arugula in the center of each of six plates. Top each with two peach quarters, and drizzle with the remaining oil. Drizzle with the aged balsamic and serve while the peaches are still warm. Serves 6.
