- 7 cups fresh diced tomatoes (into about 3/4 inch pieces) - about 2.75 lbs
- 1/4 cups thinly sliced fresh basil
- 1 Tbsp olive oil
- 1/2 tsp sea salt
- 1/4 tsp fresh ground black pepper
- 1 Tbsp pine nuts, toasted
