French Onion Soup

Ingredients
- 3 Tablespoons butter
- 3 Large Onions
- 1 Tablespoon Flour
- Fresh Ground Pepper
- 5 Cups of Beef Broth
- 4 Think slices of french or Italian Bread
- 4 Tablespoons grated Parmesan cheese
- 4 Tablespoons grated Swiss Cheese

Preparation
Step 1
In a heavy pan melt the butter, add the sliced onions and cook slowly stirring occasionally until golden.
Sprinkle on the flour and stir a few minutes to cook the flour. Season with salt and pepper.
Add the broth stirring constantly. Bring to a boil.
Lower the heat and let the soup simmer partially covered for 30 minutes.
Toast the slices of bread in the oven until brown.
Preheat the broiler.
Pour the soup into bowls and top with bread.
Sprinkle the bread with the cheeses and brown the cheese under the broiler.
Serve immediately.
