POTATO CHIPS WITH SMOKED SALMON AND ONION HERB CREAM

Ingredients
- 8 ounces sour cream
- 6 ounces cream cheese, softened
- 1/2 medium red onion, minced
- 2 tablespoons chopped fresh dill
- 4 ounces smoked salmon, minced
- 1 bag lightly salted high-quality crinkled potato chips, such as Kettle chips
- chives for garnish

Preparation
Step 1
1. Mix sour cream and cream cheese together until smooth. Add onion and dill and mix until well blended. Cover and refrigerate for 1 hour.
2. Separate out the largest potato chips. Put a tablespoon of the sour cream mixture on each large chip and top with a teaspoon of salmon.
Garnish with chives. Balance a chip on each of 12 Champagne flutes filled with sparkling wine and arrange any extra chips on a platter.
Serve at once.
