Strawberry Salad

sweet tangy dressing on green lettuce, with strawberries and toasted pecans

Ingredients

  • 1 C vegetable oil (I use Light Olive Oil)
  • 1/2 C red wine vinegar
  • 2 cloves minced garlic
  • 1/4 t white pepper
  • 2/3 C sugar
  • 1/2 t salt
  • 1/2 t paprika
  • 1/2 head red leaf lettuce
  • 1 bag Monterrey Spring mix (not sure if they call it that anymore)
  • (or I just use large clam shell container of Baby Spring Mix or Field Greens for ALL the lettuce)
  • 1/2 lb strawberries
  • 1/2 C chopped toasted pecans or walnuts
  • 1 pint shreddeed Jack cheese (I usually leave out. The original recipe I have said "slices of Jack cheese")

Preparation

Step 1

Combine first seven ingredients in a jar and shake well (or use blender)

Combine the lettuce (or use your substitute), cheese (if you choose to add) and nuts in a large salad bowl.

Shake dressing well, pour over salad and toss gently (this dressing is double for the rest of the salad)

I bet would be good substituted with some or all Spinach and perhaps feta cheese for the jack cheese. But the dressing and the toasted pecans really add to this recipe. It is nice to leave off the cheese if served with something rich.

I buy the extra large clam shell Baby Spring Mix from Sam's Club, and the Large plastic case of Strawberries (also from Sam's), and the dressing is more than enough. So, if you don't use that much lettuce as you'd get from Sam's, I'd 1/2 the dressing recipe.
