Ingredients

  • 1/4 pure maple syrup
  • 1 Tbsp. bourbon
  • 1/2 of a 15oz can of pumpkin (3/4 cup)
  • 1 tsp. ground cinnamon
  • 1/2 tsp. ground ginger
  • 1/4 tsp. salt
  • 1/2 cup whipping cream
  • 1/4 cup granulated sugar
  • 1/2 of an 8 oz container of mascarpone cheese, softened
  • 1 Tbsp. powdered sugar
  • 1/2 cup whipping cream
  • 1 3oz package of lady fingers
  • Freshly grated nutmeg

Step 1

Line a 9x5x3 loaf pan with plastic wrap. set aside. In a small bowl combine maple syrup and bourbon.

For filling: Combine pumpkin,cinnamon,ginger and salt in a small bowl and mix well.. In another bowl combine 1/2 cup of the whipping cream and granulated sugar, beat with a mixture on med speed until soft peaks form. Gently fold into pumpkin mixture.

For topping: in bowl combine mascarpone cheese and powdered sugar. Beat on low until combined. Gradually beat in 1/2 cup whipping cream just until thickened. ( do not over beat)

To assemble arrange half of the lady fingers in a single layer in bottom of prepared pan. Drizzle evenly with maple syrup mixture. Top with 1/2 of the filling spreading evenly. Arrange another layer of lady fingers over the filling. Drizzle again with Maple syrup mixture. Add rest of filling Dollop topping over filling. Using back of a spoon, carefully spread topping evenly over the filling. Cover and chill for 8-24 hours.
Use plastic wrap to lift tiramisu out of pan and onto serving platter, sprinkle with nutmeg.. Cut carefully into crosswise slices and serve.
