Grilled Pound Cake with Pineapple and Buttered Rum

Ingredients

  • 1 12 oz. pound cake, sliced into 8 pieces
  • 6-8 fresh cut pineapple spears
  • 2 Tbsp. butter, melted
  • 1/8 tsp. cinnamon
  • 1/4 c. spiced rum
  • 1/4 c. brown sugar
  • 1/2 c. half and half
  • 2 Tbsp. butter

Preparation

Step 1

Spray a clean grill with non-stick spray and preheat to medium heat.




Brush pound cake with melted butter and grill for 2 to 3 minutes per side. Remove from the grill and set aside.




Grill pineapple for 2 to 3 minutes per side. Remove from the grill and cut into chunks.




Make the sauce in a small sauce pan. Bring all ingredients to a simmer and remove from heat.




Serve with grilled pound cake with pineapple and sauce.
