Ingredients

  • 1/3 cup crushed graham crackers (about 5 squares)
  • 1/2 teaspoon ground cinnamon
  • 3 8-oz packages nonfat cream cheese
  • 1 cup sugar
  • 2 tablespoons all-purpose flour
  • 1 teaspoon vanilla
  • 1/2 teaspoon finely shredded lemon peel
  • 1/2 cup egg product (egg beaters)
  • 1/4 cup milk
  • 1/2 cup nonfat sour cream
  • 1/4 cup seedless red raspberry preserves

Step 1

Preheat oven to 375 degrees.

Crust:
Stir together graham cracker crumbs and cinnamon in medium bowl. Sprinkle onto bottom and 1 inch up the sides of well greased 8 or 9 inch springform pan. Set aside.

Combine cream cheese, sugar, flour, vanilla, and lemon peel in large mixing bowl. Beat with electric mixer on medium until combined. Add egg product and beat on low until just combined. Stir in milk.

Pour filling into prepared crust. Place pan in shallow baking pan with an inch of water. Bake 45-50 mins for 8 inch and 35-40 mins for 9 inch or until center is set.

Cool in springform pan on wire rack for 15 minutes. Loosen crust from sides of pan, cool 1 hour. Cover and chill at least 4 hours (up to 24). Top with nonfat sour cream and spoon on seedless preserves; swirl with spoon.
