Rinse turkey with cold water. Lift wings up toward neck, and tuck under bird. Push legs under the extra skin. Place turkey breast side up on a large rack roasting rack. Brush the skin with the oil. Insert the meat thermometer into the thickest partof the turkey, between the breast and thigh. Roast turkey @ 325 for about 4 to 5 hrs. When turkey turns golden cover loosely with foil tent. Check turkey durning last hr. of cooking. At the end of cook baste turkey with turkey drippings. When the temp gets to 180 to 185 the bird is done.
