Asparagus Risotto

Ingredients

  • 4 c vegetable or chicken broth
  • 2 Tbs olive oil
  • 4 green onions, chopped
  • 1 c Arborio rice
  • 2 lbs asparagus-2" pieces
  • 2 Tbs butter
  • 1/2 c grated parmesan cheese

Preparation

Step 1

In small saucepan, bring broth to a simmer.
Heat oil in a large pot. Add onions & rice; cook, stirring, until rice is browned, about 5 minutes.
Stir in broth, 1/2 c at a time, & cook, stirring constantly until almost all the broth is absorbed before adding more, until rice is done.
About 20 minutes cooking time.
May add hot water if more liquid is needed.
About 5 minutes before rice is done, add asparagus, butter and cheese; cook until asparagus is tender-crisp.
