Ingredients

  • 1/2 cup raisins
  • 1/4 oatmeal
  • 1/2 cup (1 stick) unsalted butter, room temp
  • 1/2 cup packed brown sugar
  • 1/2 cup sugar
  • 1 large egg
  • 1 cup (packed) finely shredded carrots
  • 1 1/2 cup self-rising flour ***
  • 1 1/4 tsp ground cinnamon
  • 1/2 cup chopped walnuts
  • Icing
  • 1 cup powdered sugar
  • 6 oz. cream cheese room temp
  • 1/4 cup unsalted butter room temp
  • 2 tblsp heavy cream
  • 2 tsp fresh lemon juice

Step 1

Preheat oven to 350. Line baking sheets with parchment. Place raisins & oats in small bowl; add 1/4 cup water. Let soak until water is absorbed, about 15 min. Beat butter and both sugars in a large bowl until fluffy. Beat in egg, then carrots. Add flour and cinnamon; beat to blend. Stir in raisin-oat mixture and 1/2 cup nuts (batter will be sticky.) Drop batter by level tblsp onto sheets, spacing 2 inc. apart. Bake until golden, about 20 min. Cookies will be soft.
Icing: Beat all ingredients in med. bowl until smooth, spread on cookies.

*** self rising sub - 3/4 cup reg. flour, 1 tsp baking powder, 1/4 tsp salt.
