Ingredients
- 4 T. bacon drippings or Crisco
- 2 cups white cornmeal (not a mix)
- 2 t. bakingpowder
- 2 t. salt
- 1 T. sugar
- 2 large eggs
- 2 cups buttermilk

Preparation
Step 1
Place 1 tablespoon of bacon drippings or Crisco in 12: cast iron skillet. Place in oven and preheat oven to 425 degrees.
Mix together all dry ingredients in a large bowl. Mix eggs and buttermilk in a small bowl. Add buttermilk mixture to dry mixture and stir. Do not over mix; stir until just combined.
Take HOT skillet out of oven and pour mixture into skillet; place back in the oven for 15-20 minutes or until edges get brown.
Serve hot with butter and honey.
