CRISPY FRIED CLAMS AND APPLE TARTAR SAUCE

Ingredients

  • Crispy Fried Clams:
  • 5 lb steamer clams
  • 4 eggs
  • Tabasco,to taste
  • 2 cups flour
  • 1 tsp seasoning salt or sea salt
  • countertop fryer 360 F

Preparation

Step 1

Steam the clams in salted water.Strain and place in an ice bath until the clams are cooled.Remove from the water and drain.Shuck the clams and remove all the guts exept the bellies and strips,though the bellies can also be removed if you are not fond of them.
Beat the eggs and Tabasco in large bowl.In a separate large bowl,mix the flour and the seasoning salt.
Place the clams in the egg mixture and then with a slotted spoon or stir fry basket drain off the egg and place the clams in the flour.Shake them around thoroughly to coat.Clean the spoon and dry it,then use it to lift the clams out of the flour.Shake off any excess flour and place the clams in the fryer to cook for about 4 min.max,until golden brown.Make sure the frying clams don't stick to one another.Drain the clams on a paper towel,sprinkle them with some sea salt,and serve immediately with lemon and the Apple Tartar Sauce
