SOUTHWEST SQUASH CASSEROLE

Ingredients
- 2 lbs. yellow squash
- 4 green onions, chopped (keep white & green parts separated)
- 1 (6 oz.) can chopped green chile peppers
- 2 cloves garlic, pressed or minced
- 1 T. oil
- 1/3 cup sour cream
- 2 eggs, beaten
- 1 1/2 cups shredded Salt & pepper to taste
- 1 t. sugar substitute

Preparation
Step 1
Preheat oven to 375 degrees.
Cut squash into 1-2" lengths; run through a food processor or grate the squash.
Heat oil in large skillet. Saute the white part of the green onions for 1-2 minutes; add squash and green part of the onion. Season with salt and pepper to taste; cook an additional 5-6 minutes.
Push the squash toward the outside of the pan; add a trace of oil in the center. Saute garlic for 30 seconds. Mix all together and turn the heat off.
Transfer squash mixture to a casserole dish (2 qts.). Mix in the green chillis, one cup of cheese and sour cream. Taste for seasoning.
Add the eggs and mix together. Sprinkle the other half cup of cheese on top.
Bake 20-25 minutes or until cheese turns golden brown.
Serve 8 as a side dish.
