Tuscan Pasta with Lemon Sauce

Ingredients
- 8 oz. (3 1/2 cups cooked) whole grain penne pasta
- 1/2 cup reserved pasta water
- 1/4 cup extra virgin olive oil
- 1/4 cup lemon juice
- 3/4 tsp. lemon zest
- 2 garlic cloves, minced
- 1/4 tsp. freshly ground black pepper
- 1/4 cup shaved Parmesan cheese
- 6 oz. baby spinach
- 1/2 cup sun-dried tomatoes, coarsely chopped
- 1 (15 oz.) can Cannellini beans, drained and rinsed
- 1/2 cup fresh basil, sliced into ribbons

Step 1
Cook the pasta according to package directions until al dente.
Meanwhile, in a large skillet over medium heat, add oil garlic, pepper, lemon zest, lemon juice and sun-dried tomatoes.
Drain the pasta, reserving 1/2 cup of the hot pasta water. Add cooked pasta to the skillet along with spinach and beans; stirring gently until spinach is wilted. Add reserved pasta water if needed.
Top with Parmesan cheese, garnish with fresh basil and serve.
