Sausage and Potato Casserole

Ingredients

  • 3 cups potatoes peeled and cubed boiled.
  • 4 Tbsp butter
  • 4 Tbsp flour
  • 2 cups Milk
  • 1/2 Tsp salt
  • 1/4 Tsp pepper
  • 1/2 lb Velveeta cubed, diced and shredded
  • 1/2 lb sharp cheddar cheese shredded
  • 1 lb Eckrich smoked sausage
  • 1/8 Tsp paprika

Preparation

Step 1

Cut sausage length wise and chop into 1/2 " moon cuts.
Put cooked potatoes in 2 Qt casserole dish. Add cooked meat and toss. Mix all the remaining ingredients EXCEPT sharp cheddar and paprika. in a sauce pan until smooth. Pour over potatoes sprinkle sharp cheddar and paprika on top.

Bake 350 35-45 minutes till golden on top
