Zucchini Salad

Ingredients

  • 2 medium zucchini, peeled and then shaved thinly with a vegetable peeler
  • 1 cup grape tomatoes, halved
  • 1 garlic clove, minced, (or 1/4 cup green onion, minced)
  • small handful basil leaves, sliced into thin ribbons
  • 2 tablespoons red wine vinegar ( I bet lemon juice would be delicious, also)
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Preparation

Step 1

1. Place zucchini, tomatoes, garlic, and basil in a large mixing bowl.
2. Mix vinegar, olive oil in small bowl and pour over vegetable mixture.
3. Toss together and add salt and pepper as desired.
