Ingredients

  • Frosting:
  • Pumpkin Cookies
  • 1 cup shortening—I used margarine-specifically I can’t believe it’s not butter
  • 1 cup sugar
  • 1 egg
  • 1 cup pumpkin
  • 2 teaspoons vanilla
  • 2 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 2 teaspoons cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup nuts
  • 1 cup brown sugar
  • 3 Tablespoons margarin
  • 4 Tablespoons milk
  • 1 cup powdered sugar
  • 1 teaspoon vanilla

Preparation

Step 1

Cookies: Combine and mix first ten ingredients. Stir in nuts. Bake a 350 degrees 10 to 12 minutes.
Frosting: Stir and boil first 3 ingredients for 2 minutes. Cool. Add powdered sugar and vanilla. Frost cookies while frosting and cookies are both still warm so the frosting puddles a little. You can heat the frosting up on the stove it gets too firm.
