Spiralized Raw Zucchini Salad with Avocado and Edamame | Skinnytaste

Ingredients

  • 1 medium zucchini, ends trimmed off
  • 1/2 lemon
  • 1/2 tbsp olive oil
  • kosher salt, to taste
  • fresh black pepper, to taste
  • 2 oz diced avocado (1/2 medium haas)
  • 1/3 cup shelled cooked edamame
  • 1 basil leaf, minced
  • 1 tsp minced chive

Preparation

Step 1

Use a spiralizer or a mandolin fitted with a julienne blade and cut the zucchini into thin spaghetti-like strands. Trim the strands into bite size lengths, about 8 inches long and place it in a large work bowl. Drizzle the olive oil, lemon juice, salt and pepper and toss.

Dice the avocado into small pieces and add to the bowl along with the edamame, basil and chives. Serve right away and enjoy!

For someone who is allergic to avocado, would this salad be the same without it? Is there something I could add in its place? Thanks!

Hi, I love avocados but one of my daughters is allergic, you could replace the avocados with humus or I have used mashed green peas. We do a lot of Avocado stuff but when looking for a replacement the green peas seem to be the most popular.

This will still taste great without avocado, you can add some shaved parm!

How long does the zucchini keep when you julienne/spiral it before adding to other recipes?

You can do it a day ahead and keep it tightly wrapped before mixing with the oil and lemon.

I made this receipe last night for today's lunch and it was DELISH! Also, I don't have a spiralizer but I do have a Veggetti that I bought form Bed, Bath and Beyond, to make the zoodles and it works great!

This recipe sounds delightful. I just got a spiralizer and have only used it once, but love it. When I make this recipe I would sub feta cheese for the avocado, partly to up the protein level, but also because my husband does NOT like avocado. Really looking forward to trying this; it will be nice when we're at the beach and I do not have access to a stove…

Postscript: Just watched the video - it's very well done. And I have decided to add some grilled chicken breast to make it into a whole meal (along with the feta).

I tried the recipe for lunch today, omitted avocado, added grilled chicken pieces and some sheep's milk feta… this recipe was a tremendous success. Both my husband and our guest were very pleased with it (our guest was surprised that the spaghetti was really zucchini). My husband doesn't offer compliments lightly. Thank you for such a great recipe, especially one that uses my new toy. Love my spiralizer!
