Nutmeg Strawberry Muffins

Ingredients

  • 2 c. stemmed and halved strawberries
  • 2 c. sugar
  • 3 c. flour
  • 1/2 c. cornmeal
  • 1 Tb nutmeg
  • 1 tsp baking soda
  • 1 1/4 c. vegetable oil
  • 4 eggs, beaten
  • 1 c. chopped walnuts (optional)

Preparation

Step 1

Preheat oven to 375

In a bowl toss strawberries and 1 Tb sugar, set aside. In large bowl mix remaining sugar, flour, cornmeal, nutmeg and baking soda. Mix oil and eggs with strawberries; add to flour mixture. Add nuts. Mix just to moisten dry ingredients.

Measure 1/3 c. batter into lined muffin tin or into 2 greased loaf pans.

Mix 1 Tb sugar, 1 Tb cornmeal and 1/4 tsp nutmeg..sprinkle over top of muffins or loaves.

Bake about 25 mins for muffins.
Bake 1 hour and 10 mins for loaves
