Ingredients

  • Dressing:
  • 1 bag (10 oz./300g.) of spinach, washed and dried, removing thick stems
  • 8 oz. (225g) Havarti, cut in matchsticks
  • 1 pint of fresh strawberries, sliced
  • 1 c. (250ml.) precooked baby shrimp
  • 1 large endive, sliced (optional)
  • 1 small red onion, finely sliced
  • roasted pine nuts for garnish (optional)
  • 6 tbsp. (90ml.) olive oil
  • 2 tbsp. (30ml.) white wine vinegar
  • 2 tsp. (10ml.) honey
  • 1 1/2 tsp. (7ml.) dijon mustard
  • salt and pepper to taste

Preparation

Step 1

Mix dressing ingredients and refrigerate for 1 hour. Divide spinach equally onto each plate. Arrange equal amounts of other ingredients on top, finishing with pine nuts. Drizzle with dressing and serve.
