Roasted Potato Scramble

Easy and delicious. Personally I think its best when the yolk is runny.
Ingredients
- 5-7 Baby Red Potatoes, depending on size
- 4 Eggs
- Chopped Bacon or Sausage
- Salt
- Pepper
- Grated Cheddar Cheese (optional)
- Parsely
- 2-3 Tbsp Olive Oil

Step 1
1) Chop potatoes into quarters.
2) Toss potatoes with olive oil, salt and pepper.
3) Place potatos on baking sheet, and bake on 400 degrees until light golden brown (15-20 minutes).
4) Meanwhile, chop and cook bacon/sausage in frying pan.
5) Cook eggs over-easy.
To Serve:
If you can time it right, everything should be done at the same time. Place potatos at bottom of large bowl. Next, sprinkle bacon/sausage pieces evenly amongst potatoes. Finally, place over-easy eggs sunny side up on top and garnesh with parsely flakes (or freshly minced parsely), salt & pepper to taste, and grated cheese if used. Break the yolk before dividing portions.
