Ingredients
- 2 tbs butter, softened
- 1 1/2 tsp finely chopped cilantro
- 1/2 tsp finely grated lime zest
- 1/4 tsp green tabasco or jalapeno sauce
- kosher salt
- 2 lg. boneless chicken breast
- 2 tbs fresh lime juice
- 1 tbs EVOO

Preparation
Step 1
In a small bowl, mash the butter, cilantro, lime zest, tabasco, and salt to make a smooth butter. Scrape onto wax paper and roll into a log. Refrigerate until hardened.
Season chicken with salt and pepper and drizzle with lime juice and EVOO. Let sit at room temperature for 15 minutes.
Grill chicken and serve hot with pats of cilantro butter.
Serve with grilled squash and bell pepper sliced into match sticks and fresh lime wedges.
