CRUSTY PARMESAN-HERB ZUCCHINI BITES

- 4 medium zucchini, sliced in half lengthwise
- 1/2 C freshly grated Parmesan
- 1-2 Tbs fresh rosemary and thyme, minced
- Olive oil
- Salt & pepper
Preheat oven to 359*.
Lightly brush both sides of zucchini with olive oil and place on a lined cookie sheet.
Combine cheese and herbs. Sprinkle over zucchini. Season with salt & pepper.
Bake for 15 minutes. Place under the broiler for last 3-5 minutes until cheese is crispy and browned.
