Roasted Tomatoes, Sausage and Gnocchi

Very quick meal that you throw all the ingredients into one roasting pan and then add refrigerated gnocchi when done.

Ingredients

  • 1 lb. sweet italian sausage links cut into bite size pieces
  • 3 pints cherry tomatoes
  • 2 bay leaves
  • 2 cloves of garlic
  • 1 large onion cut into chunks
  • 2 tbs. extra virgin olive oil
  • 3 tbs. basalmic vinegar
  • 2 tsp. italian seasonings
  • 2 packages refrigerated potatoe gnocchi

Preparation

Step 1

Heat oven to 425 degrees. Place first 6 ingredients into roasting pan mixing together to incorporate ingredients.
Roast for 55 minutes.

Cook Gnocchi according to package directions add to roasting pan. Mix to incorporate.

Serve.
